- lấy mẫu theo trật tự sau để ngăn chặn sự nhiễm chéo và tạo điều kiện cho việc làm sạch các dụng cụ lấy mẫu một cách dễ dàng
a. Đối với nguyên liệu bột , lấy theo thứ tự sau:
- Nguyên liệu không dính, không mùi, trắng , dễ chảy hoặc tinh thể
- Nguyên liệu dạng bột trắng, khó nhận dạng được mùi vị
- nguyên liệu dạng bột trắng, có mùi nặng
- nguyên liệu dạng bột trắng , dính
- nguyên liệu dạng bột có màu và không dính
- nguyên liệu dạng bột có màu và dính
