Bệnh Minamata là đại thảm họa môi trường của Nhật-như cái giá phải trả cho việc quá nôn nóng phát triển kinh tế mà bỏ qua việc bảo vệ môi trường.
Từ năm 1932-1968, công ty Chisso (Nhật) sử dụng thủy ngân hữu cơ là chất xúc tác để sản xuất acetaldehyde, axit acetic và các chất dẻo.
Methyl thủy ngân là chất kịch độc, độc đến nỗi chỉ vài giọt rơi vào da có thể dẫn đến tử vong ngay lập tức.

Thủy ngân phát tán trong môi trường nước, bám vào phù du và lắng xuống bùn. Cá hấp thụ oxy trong nước qua mang cá, tích lũy thủy ngân trong cơ thể.
Khi ăn phải những con cá bị nhiễm độc đó dần dần, người ăn sẽ tích lũy lượng thủy ngân đáng kể trong cơ thể.
