Thời kỳ suy thoái của những năm đầu thế kỷ XX và Chiến tranh thế giới thứ nhất đã làm cho ngành khách sạn bị chững lại. Sau Chiến tranh thế giới thứ nhất nhiều khách sạn đã được xây dựng ở những thành phố lớn và các nơi công cộng xa trung tâm. Năm 1927, khách sạn “Stevens” được khai trương tại Chicago với 3000 phòng (sau này được đổi tên là Chicago Hilton) được coi là khách sạn lớn nhất thời kỳ đó. Giai đọan giữa hai cuộc chiến được đánh dấu bằng sự phát triển của công nghiệp xe hơi và sự xuất hiện của Motel tại Mỹ vào năm 1927. Bên cạnh các nước có truyền thống về kinh doanh khách sạn như: Thụy Sỹ, Áo, Pháp đã xuất hiện nhiều nước phát triển ngành khách sạn như: Tây Ban Nha, Hi Lạp… Ngoài khách sạn nhiều loại hình kinh doanh lưu trú khác cũng phát triển như: Motel, Camping, Làng du lịch… Đặc biệt, sau những năm 1950, xu hướng phát triển Motel đã vươn rộng suốt từ miền Tây đến miền Nam nước Mỹ (Foster, 1999). Đến thập niên 80, 90 của thế kỷ thứ XX, việc xây dựng và phát triển các khách sạn đã trở nên rộng khắp trên thế giới. Suốt những năm 1990, số lượng phòng đã nhiều hơn số lượng khách thuê (Foster, 1999). Sự phát triển của ngành khách sạn đã góp phần vào việc thúc đẩy hoạt động du lịch, thu hút công ăn việc làm, đóng góp vào sự phát triển kinh tế tại nhiều vùng, nhiều quốc gia.
