Đồng bằng sông cửu long là nơi chung sống của các dân tộc Kinh, Hoa, Khmer, Chăm. Về phương diện văn hoá, vùng đất này có sự pha trộn, giao thoa lẫn nhau. Tuy vậy, ở mỗi dân tộc, về một phương diện nào đó, đều lưu giữ lại những nét riêng của mình. Mỗi dân tộc có một số món ăn đặc trưng. Đối với người Việt có canh chua, cá kho tộ, lẩu mắm,... Trong khi đó, Bún Nước Lèo, Bún Mắm, canh Xiêm Lo,... lại là đặc trưng của người Khmer. Người Hoa thì có các món như heo quay, vịt tiềm, vịt khìa, canh thuốc bắc, hột vịt muối,... Nhưng có thể nói sự phân chia chỉ mang tính chất lý thuyết, bởi trong thực tế, các món ăn này không có giới hạn rõ ràng giữa các dân tộc. Trong số các món ăn vừa kể trên, hầu hết người Hoa, người Việt, người Khmer ở Nam bộ đều ăn như nhau. Trong cộng đồng người Việt, Khmer, Hoa cũng có một số khác biệt về khẩu vị trong cách chế biến thức ăn. Ví dụ như: Người Hoa thích ăn thịt hơn ăn cá, ăn nhiều mỡ heo, ít ăn canh chua hơn canh mẳn, thích cá biển mặn chưng thịt; người Khmer thích ăn canh xiêm lo nêm mắm bò-hóc thay vì canh chua nhưng do quá trình cộng cư kéo dài từ đời này sang đời khác, mối giao lưu chung chạ càng khắng khít nhau hơn, nên các món ăn cũng dần dần chuyển hoá giống nhau. Cả ba dân tộc này ở Nam Bộ ngày nay hầu hết đều thích mắm, cá kho.
