Protein, phát âm tiếng Việt: Prô-tê-in (Protein), còn gọi là chất đạm, là những đại phân tử được cấu tạo theo nguyên tắc đa phân mà các đơn phân là axít amin. Chúng kết hợp với nhau thành một mạch dài nhờ các liên kết peptide (gọi là chuỗi polypeptide). Các chuỗi này có thể xoắn cuộn hoặc gấp theo nhiều cách để tạo thành các bậc cấu trúc không gian khác nhau của protein.
Tất cả các tế bào sống đều chứa chất protid, điều đó có nghĩa protid là chất cần thiết cho sự sống. Nó tham gia vào thành phần mỗi một tế bào và là yếu tố tạo hình chính.
