Analysis of free water content (Aw) and moisture content of dried herbal beverages from salad dressings that changed during storage at room temperature were packed in aluminum foil bags for a period of 0, 7, 14, 21 and 28 days, as shown in Table 4-6, found that the amount of free water and the moisture content increases throughout the shelf life. When the moisture content of the dried herbal drink from the product salad products increases, the amount of free water (Aw) is also increased.
