Từ công nghệ sản xuất hiện hành tại làng Vân Cù chúng tôi tiến hành bố trí các thí nghiệm sau đây:

Khảo sát sự ảnh hưởng của độ ẩm bột nhào đến chất lượng của bún.
Áp dụng theo qui trình sản xuất tại cơ sở, chúng tôi tiến hành sử dụng bún thành phẩm 10% để phối trộn với bột gạo trong quá trình nhào trộn:
