Ai cũng biết rằng: Văn hóa ẩm thực là một biểu hiện quan trọng trong đời sống con người, nó cũng hàm chứa những ý nghĩa, triết lý. Từ xa xưa, trong dân gian nước ta đã tổng kết thành câu tục ngữ:" Học ăn, học nói, học gói, học mở" chủ yếu muốn nhắc nhở thế hệ sau mới bước vào đời thì" học ăn " đầu tiên. Ở các nước khác trên thế giới, ngoài quan niệm dân gian thì các nhà chuyên môn, những người yêu thích, hiểu ẩm thực... đều bàn luận, viết những cuốn sách hay về nghệ thuật ăn uống.

Đối với dân tộc Việt, cái ăn là cái ăn văn hóa, nó có một ý nghĩa sâu sắc và liên quan đến mọi mặt của đời sống xã hội. Người Việt cho rằng: " Có thực mới vực được đạo", đây là một đặc điểm hết sức biện chứng, coi đó là tiền đề để con người có thể bước vào lĩnh vực hoạt động khác. Việc ăn là việc trọng của mỗi người, kể cả trời, đất, thánh, thần đều phải tôn trọng việc ăn. Điều đó thể hiện ở câu nói: " Trời đánh còn tránh miếng ăn", và người Việt cũng đối xử với thánh thần thông qua lễ vật dâng cúng. Những đồ ăn, thức uống dùng trong dâng cúng thì đồ ăn chiếm quan trọng số một; người trần gian, con cháu trong nhà không được phép ăn trước nếu chưa cúng tổ tiên, thần thánh. Những đồ ăn, thức uống dùng trong dâng cúng đều được nấu nướng hết sức cẩn thận, chu đáo và tươm tất, bày biện trang trọng và thái độ thành kính trong cử chỉ, lời nói và ánh mắt.
