Đánh giá mức dinh dưỡng và độc hại trong các loài cá với các tiêu chuản của IOM và WHO.
⦁ Từ kết quả phân tích hàm lượng các nguyên tố dinh dưỡng và nguyên tố độc hại đã được điều chỉnh độ ẩm cho 1 kg khối lượng tươi cho các mẫu cá thu thập tại các tỉnh Ninh Thuận, Nha Trang, Đà Lạt. Và theo thống kê của Viện Dinh Dưỡng năm 2010 thì lượng cá tiêu thụ hàng ngày với người trưởng thành là 59.7g/ ngày. Ta xác định được hàm lượng các nguyên tố dinh dưỡng và nguyên tố độc mà người Việt Nam tiếp nhận trong một ngày theo công thức:
