Các bộ sưu tập trưng bày trong Bảo tàng Mỹ thuật Việt Nam được giới thiệu theo tiến trình lịch sử, thể loại và chất liệu, nhằm thể hiện những giá trị điển hình của các giai đoạn lịch sử mỹ thuật, thuận tiện cho du khách chiêm ngưỡng, với trên 2.000 hiện vật được trưng bày cố định với các chủ đề chính:

- Mỹ thuật thời tiền sử, sơ sử
- Mỹ thuật từ thế kỉ 11 đến thế kỉ 19
- Mỹ thuật từ thế kỷ thứ 20 cho đến nay
- Mỹ thuật ứng dụng truyền thống
- Mỹ thuật dân gian
- Gốm nghệ thuật Việt Nam từ thế kỉ 11 đến thế kỉ 20, bao gồm các mẫu gốm được trục vớt từ 5 con tàu cổ.
