Cooking food thoroughly is the key to kill most harmful bacteria that cause food poisoning. Big meat joints or whole poultry is more difficult to prepare a safe way, so take special care with them. After you have learned all of this I realized why the picnic food has spoiled. I let the chicken out unrefrigerated for bread because of the way too long and I didn't care to separate salads and ready-to-eat food. I can use cool boxes to transport food. But I guess we all learn from bad experiences.
