Độ ẩm được xác định bằng phương pháp sấy ở 105 C đến khối lượng không đổi. Độ Brix
(vật chất khô hòa tan) của thanh long được xác định bằng khúc xạ kế (Atago Hand
Refracttometer 0 – 32). Nguyên liệu xay nhuyễn, ép lấy dịch, cho 1 giọt vừa đủ lên mặt kính
thiết bị khúc xạ kế và đọc kết quả trực tiếp trên thiết bị.
Thể tích của các miếng thanh long trước và sau sấy được xác định dựa trên thể tích chiếm chỗ
