A study on " Survey of microbial infection levels in raw beef in Thu Thua cattle slaughterhouse and market Tan An town, Long An province". The study was done in 6 months, with 3 contents to assess the veterinary hygiene condition, studied parameters consisted of pH, H2S, NH3, total aerobic bacteria, Coliforms, Clostridium perfringers, E. coli, S. aureus and Salmonella on meat samples according to TCVN 7046:2009 environment. The number of samples included 42 beef, 6 water and 106 swab samples. The results are as following:
Veterinary hygiene conditions at cattle slaughterhouse, there were only 29 in 45 standard criteria achieved the 14/2011/BNN-PTNT and met column B. At two markets, all samples were not met the 47 of Decree 33/2005/ND-CP.
Microbial contamination on beef samples, the contamination of total aerobic bacteria and Coliforms were 100%, E. coli was 94,44%, Sta. aureus was 33,33%, Salmonella và C. perfringenes were 5,56% respectively at the slaughterhouses. For water and swab environmental samples, total aerobic bacteria, Coliforms, E. coli were 100%, Sta.aureus was 30%, Salmonella spp. was 10%, C. perfringenes was 13,33%.
Decreasing pH but H2S and NH3 in raw beef samples increased over time. Prevalence of total aerobic bacteria, Coliforms on meat and environmental samples taken at two markets were 100%. At 7-8 AM, the prevalence of E. coliwas 66,67%, Sta. aureus and Salmonella spp.were 16,67% in the beef at Ward 1 market, there was not detected C.perfringene. The prevalence of E. coli and C.perfringenes were 66,67%, Salmonella spp. was 16,6% (Ward 2 market). At 10-11 AM, the prevalence of E. coli was 83,33%, Sta. aureus and Salmonella spp. were 16,67% và C. perfringenes was 33,33% (Ward 1market); at Ward 2 market, the prevalence of E. coli, Salmonella spp, C. perfringenes were 66,67%, 50,00% and 100% respectively. No raw beef samples met agreement of standards (TCVN 7046:2009) and used as food.
